banana blueberry bread muffins

Since I'm on a mission to loose my pregnancy weight I've I started doing a lot more healthy cooking and baking~ 

I've also downloaded this app called Yummly which has been wonderful for recipes!

I found this recipe for banana blueberry muffins that I really really wanted to try out for myself. I've always wanted to make banana bread since trying it when my honey's mum made some.

The ingredient list includes flour, bicarbonate of soda, 4 over ripe bananas, blueberries, 2 eggs and vegetable oil. I didn't add any sugar like the original recipe stated. Plus, I had all of these ingredients in my cupboards so I didn't have to go out specially to find ingredients. I ended up using a masher to mash the bananas too since a fork just wasn't doing it very well.
This is what my mixture turned out like~ I added a couple of handfuls of blueberries. I've recently found out that I really really love blueberries. It's one of my honey's hated foods though haha.
I have cute muffin cases too! Girly baking~ I've been wanting to use to use muffin cases for ages.
The amount of mixture I made was enough for 12 medium sized muffins. I tried my best to get equal amount of mixture in each case. This is where it also became messy and I had lots of mixture all over my kitchen side.

Then I played the waiting game whilst they cooked. They were in the oven for 25 minutes on 180oc. I'm an over cautious person when it comes to cooking with certain things such as eggs and the recipe said they cook for around 20 - 25 minutes so I left them in for 25 minutes.

The kitchen smelt of banana; it was lovely! I don't think they look too bad.

These muffins were really nice and moist inside, and the blueberries were so nice with the banana. I've had banana bread before but never with blueberries in.  
They remind me of little loaves.
I don't think they need sugar in the recipe at all because the bananas have a nice sweetness to them. It's also really pretty how the blue colour leaks into the muffin and makes a nice marble effect.

I'm definitely going to make them again in the future~

  1. Oh my gosh my stomach is rumbling as I read this post. I'm a terrible baker - I managed to burn some brownies I made and that was from one of those already-mixed packs! I would love to try this out though :D
